To think that sushi and ramen best represent Japanese food is like saying that pizza and pasta are the dishes that exemplify Italian cuisine. Japanese gastronomy is so unique that so many chefs are inspired to use it as a base when developing new recipes. These are big tastes – rich and sweet in equal measure – which are now familiar here at Tapasake.
Surrounded by the irresistible beauty of the Indian Ocean and being situated at the western tip of the island, Tapasake offers one of the best sunset views at One&Only Reethi Rah. While the focus remains on traditional Japanese dishes with French, Peruvian and other Asian influences, the new menu at Tapasake features new-style sashimi, ‘avant-garde’ nigiri, as well as the classic Tapasake signature dishes with a twist. The old standards of black cod marinated in yuzu miso remains rich and sweet. One of the highlights from the newly added items includes the avant-garde nigiri. These are classic nigiris that have been taken to another level by using unexpected ingredients such as foie gras, wagyu beef and eel. An interesting mix of delicious crunchy shrimps, fresh maguro sashimi and truffle mayonnaise create one of the new signature rolls. Saga wagyu beef, well known for its impressive quality, meets truffle teriyaki sauce and is flambéed with fine cognac.
The resort recommends the fruit crumble served on hoba leaf, or our homemade black sesame seeds, tofu ice creams or lime and sake sorbet or opt for Tapasake’s omakase menu, featuring the chef’s specials. The omakase menu features sushi chef’s specials, the classic black cod in three different dressings, slow cooked wagyu striploin and assorted mochi ice cream.

SANTA CRISTINA PINOT GRIGIO DELLE VENEZIE IGT
The wine, straw yellow in colour, shows delicate and fruity aromas which recall, in particular, yellow apples and citrus peels. It is a balanced wine character by its softness and ease of drinking.
TERRA ANDINA RESERVA PINOT NOIR
It shows a seductive and complex combination of black cherry and raspberry aromas, rose petals and violets, mingled with a soft touch of vanilla and coconut. Full-bodied and rich, with a soft and velvety texture, th wine carries smooth tannins and an elegant aftertaste.
