Promising the guests a true Swiss voyage, Chef Carsten Kypke from the reputed Bellevue Palace, Bern along with the Shamiana team has gotthelfs burnt creamcrafted a menu showcasing some of the region’s absolute favorites. The carte features Hörnlisalat mit Essiggurken und Waadtländer Nussöl – “Hörnli” salad with gherkin and nut oil, Sbrinzschaum-Süppchen mit Feigenchutney und Pfeffer aus dem – little Sbrinz foam soup with fig chutney and black pepper from the Maggia valley, Salmerino in Carpione – pink salmon with vegetables, Gebratenes Poulardenbrüstchen mit Lamm-Trockenfleisch Frischkäsefüllung, eingemachtes Wurzelgemüse Ribelmaisschnitten – roast Gruyère chicken breast with air-dried lamb meat-cream cheese filling, marinated root vegetables polenta triangle, Pizokel Puschlaver Art – gratinated Spätzle with cream cheese.
